The next day, Della gave me his recipe for Alligator Etouffe, <span style=\"font-size: 9pt; font-family: Verdana;\">from his four generations of Louisiana Recipes Houma Nation Book:<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size: 9pt; font-family: Verdana;\"> <\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><strong><span style=\"font-size: 9pt; font-family: Verdana;\">Alligator Etouffe<\/span><\/strong><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\"> <\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">1\/3 cup parsley<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">1 clove chopped garlic<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">1 \u00bd blocks of butter<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">1 can tomatoes<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">3 stalks chopped celery<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">1 large chopped onion<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">1 \u00bd cup green onion<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">3 tbsp. roux<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">salt &amp; pepper to taste<\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\"> <\/span><\/p>\n<p class=\"MsoNormal\" style=\"padding-left: 30px;\"><span style=\"font-size: 9pt; font-family: Verdana;\">Cut alligator meat into small pieces. Boil in salt water until tender; set aside. Cook onions, celery and garlic in butter until light brown. Add tomatoes and roux and cook for 30 minutes, stirring often. Add meat and cook on low for another 45 minutes. Serve over rice.<\/span><\/p>\n<p class=\"MsoNormal\">\n<p class=\"MsoNormal\"><span style=\"font-size: 9pt; font-family: Verdana;\">I told Della that I wasn&#8217;t sure I could get alligator meat in Columbus, Ohio. A few hours later, Walter called me and asked, &#8220;You&#8217;ve got turtles in Ohio, don&#8217;t you?
